So we are all concerned about getting our “5 a day” so are all vegetables good for you…?? Simple answer is no… that is if you are concerned about vegetables and toxins.
Many farmers and gardeners use herbicides to clear a plot for growing crops, to eliminate weeds that are choking out their plants and to kill unattractive or otherwise undesirable growths. Unfortunately, large amounts of chemical herbicides can be harmful to human health, even if you rinse your vegetables. The Environmental Working Group (EWG) has identified several vegetables that are especially high in harmful pesticides. These veggies I would make sure that an organic option is chosen.
These veggies are:
Celery – Celery is ridged with no protective skin, which makes it easy for the vegetable to absorb chemicals and difficult to completely rinse off herbicides before consumption. Tests by the EWG have found 64 residual pesticides and herbicides on celery. These chemicals include 11 known or probable carcinogens, 12 neurotoxins, 31 probable hormone disruptors and 13 reproductive and developmental toxins.
Spinach – My favourite – Nutrient rich, leafy green spinach is potentially one of the healthiest vegetables. Unfortunately, it is also one of the most contaminated vegetables, containing up to 48 different chemical herbicides and pesticides.
Bell Pepper – often sprayed heavily with pesticid, Sweet bell peppers (the red variety) are especially harmful and are laced with up to 49 different chemicals
Kale – Kale is a robust, leafy green vegetable that is less vulnerable to insects and disease than most crops. Still, it is ranked among the worst vegetables in terms of herbicide content.
Potatoes – Since they grow underground, it might seem that they aren’t as vulnerable to herbicides as most veggies. Surprisingly, EWG tests have found 37 different pesticides on potatoes, including 7 known or probable carcinogens, 9 neurotoxins, 12 probable hormone disruptors and 5 reproductive toxins.[like]
